Wild Garlic Pesto
A fresh, pungent, garlic pesto which adds a “garlicky twist” to many dishes. Alternatively, use as a dip. Makes a great homemade gift.
- 100 g wild garlic leaves loosely chopped
- 50 g toasted pine nuts
- 50 g grated parmesan cheese
- 2 tbsp extra virgin olive oil
- pinch salt
- pinch sugar
- lemon juice to taste
- In a blender, grind the wild garlic, pine nuts and Parmesan. While blending, pour in a steady stream of the olive oil until smooth. (you can add more to suit your taste) Add salt, sugar, lemon juice and pulse until mixed. Store in the fridge in a jar with a tight lid.
